Lemon Poppy Seed Muffins | Recipes

Lemon poppy seed muffins are one of my favourite kinds of muffin. I love the crunchiness and the pop of the poppy seeds. I recently made them for the kids, it was their first time having them and they were a huge hit! So much so that we finished them in a day, and then proceeded to make another batch the next! It is now one of our fast and firm favourites in the family.

So, I thought it might be good to share with you the recipe for this deliciousness, it will keep you all busy for a while, and you get a tasty treat at the end, so what’s not to love?

ingredients for lemon poppy seed muffins

Ingredients:

2 1/2 cups plain flour

1 3/4 teaspoons baking powder

1/4 teaspoon bicarbonate (baking soda)

1 teaspoon coarse salt

1 cup sugar

2 eggs

zest of one lemon

1/4 cup lemon juice

1/4 cup milk

1/2 cup unsalted butter, melted and cooled

3 tablespoons poppy seeds

For the glaze

icing sugar

water

Method:

Turn on the oven to 160C/350F and prepare the muffin tin with cases. In a bowl sift together the flour, baking powder, bicarbonate and salt. In another bowl, whisk together the eggs, sugar, zest juice and milk. Then whisk in the butter. Add the wet ingredients to the dry ones until just combined. The add the poppy seeds.

Divide the batter in the muffin cups then bake for about 20 minutes. They are cooked when a skewer inserted in the middle comes out clean. Allow to cool, then prepare the drizzle. I use about three tablespoons of icing sugar, then add water a teaspoon at a time until I get the right consistency. Drizzle over the cooled muffins and enjoy!
